Buffalo Cauliflower Dip

It is a common scene that played out just about everywhere for the Super Bowl last weekend. There is a party/gathering/potluck that requires feeding a crowd with varying tastes/budgets/ideas of health and you end up with chips/pizza/cheese. The easiest options (chips and pre-made dip) or cheapest full meal (delivery pizza) or most traditional appetizer (cheese and crackers) are not always the best options when you are trying to be healthy. All of these are great to have in moderation… but to have them all on one day at one event? I can already feel the stomach ache coming on and my face starting to break out.

Here is where I am different. I love appetizers. I LOVE them. I get really excited when someone says lets just share a couple small plates at a restaurant. I could live on chips and dips (any chips, any dips). Some of my favorite memories are happy hours on the beach or after a day of skiing. One year for my birthday I even convinced my mom to let us do a million Mexican themed appetizers for my birthday dinner. It was a dream come true.

Those parties where they say bring food to share? That is my time to shine. I have mastered the healthy, the unhealthy, the vegan, the easy, the cheap, the over the top… quite the variety. My favorite is hands down buffalo chicken dip. It is warm and gooey and pretty unhealthy. This fall I made it my mission to somehow make it healthy. After (too much) trial and error, I took it to a girl’s night vision board party… and they deemed it a success! After a little more perfecting… I am ready to share it with y’all. I hope you enjoy it as much as I do.

Vegan version of a buffalo chicken dip!

Instructions
  1. Pre-heat oven to 350 degrees
  2. Blend together first 5 ingredients until smooth
  3. Stir in riced cauliflower
  4. Place in oven safe container and bake for 45 minutes or until the top begins to brown
  5. Service with celery slices, tortilla chips, or pita chips
